Marrakech Carrot Salad

Marrakech Carrot Salad

This is one of my all time favourite salads that I make and always goes down a treat when I am running an event or cooking for clients.

It livens up the humble carrot and is a great mix of flavours.

MARRAKECH CARROT SALAD

Serves 6

Salad

400g grated carrots

1 tin chickpeas drained and rinsed

6 medjool dates pitted and chopped

4 spring onions finely chopped

A handful chopped coriander and mint (20g)

Dressing

3tbsp olive oil

zest and juice of 2 limes

2 tsp maple syrup

½ tsp ground cumin

¼ tsp grated nutmeg

¼ tsp turmeric

pinch of dried chilli flakes

sea salt and black pepper

handful of chopped roasted pistachio nuts (roasted 180/Gas 4 for 8 mins)

Pomegranate seeds to garnish

Preheat the oven to 200c/Gas mark 6

Drain the chickpeas and dry on some kitchen towel and put into a bowl with a little olive oil, salt and pepper and stir through.  Lay on a baking tray lined with parchment and roast for 20 to 25 minutes.

For the dressing add all the ingredients together in a bowl and combine.

Wellness Day

Wellness Day

Happy New Year to you all! On the 5th February 2019 I will be hosting my first Wellness Day in Gerrards Cross with my sister who is a fantastic Kundalini yoga teacher and dynamic coach, Jo Beardsworth. The day will be filled with Kundalini yoga, nourishing food with recipes to take home, a talk on how to optimise our wellbeing and the impact our food choices make on balancing our hormones, and a dynamic coaching session to build confidence and kick off 2019 full of health and happiness. We will finish the day with a gong bath run by Lucy Keaveney who runs sessions regularly in London. Lucy will guide us through a journey using different sounds from ancient American instruments to shamanic drums, chimes, crystal bowls and her wonderful Air Gong. The experience is deeply restorative and can take you into a deep state of meditation without having to do any work. It can help with a number of issues including insomnia, anxiety, trauma and depression. It can help you break free of old patterns and regenerate and re-balance yourself. Come and join us for what will be a fantastic day!
